From the classic to the imaginative, our impressive French menu has it all. Beef Wellington is perfect for a dinner party, as it can be assembled ahead and baked just before serving. In this technique-intensive workshop, discover the secret to perfect soups, soufflés and mousse – then sit down to enjoy your très chic French feast. Vive la France!

Skills and techniques that will be covered on the course:

  • Caramelizing onions
  • Working with puff pastry
  • Working with white chocolate
  • Whipping and folding egg whites and heavy cream
  • Making a coulis

  • The menu:

    French onion soup with croutons

    Spinach soufflé

    Individual Beef Wellingtons

    Béarnaise sauce

    White chocolate mousse with raspberry coulis

    Bonus recipe: potato-stuffed mushrooms

    The class starts at 6pm and finishes at 9pm. We require that students wear closed-toe shoes in all hands-on workshops and an apron will be provided for use in class. After the class personal recipes packets are provided for students to take home.
