We ask so much of ourselves today! Women and men both have challenging jobs that require huge commitments of time and energy, but it doesn't stop there. We have spousal and family relationships that require time, attention, and nurturing. We have hobbies and interests; homes that need decorating, landscaping, cleaning, and maintenance; we have children who require our loving presence, attention and guidance, not to mention chauffeuring! And we're fueling all those demands on our energy with fast food, convenience foods, and take-out. It doesn't work.

We need real food, honest food, full of vitamins and minerals, and so do our families. I invite you to come back to the table, to savor the difference real food can make in your energy level and your sense of well-being.

With my ‘Cheap Eats’ cookery class you will learn how to cut the budget without resorting to boxed dinners and canned soups, without losing nutritional value or flavor.

Hands-on experience in the kitchen is invaluable during the learning process, so my cooking class guarantees a practical approach. You will discover new ways to stretch meat dollars and learn how to use inexpensive but nutritious vegetable "superfoods" like kale and collards.

Tips on how to cook once and eat 2-3 times without repeating the original meal, as well as how to roast a whole chicken for economy, and boning chicken breasts, using the carcass and bones for stock will also be included in the class.

Class materials include a 30-page recipe booklet for more inspiration and easy to make recipes.

Class costs $60 per person and includes dinner.

Linda Hoffman is a graduate of the Professional Program at Culinary School of the Rockies in Boulder, and has worked throughout northern Colorado as a personal chef. As part of her education, she studied in France, learning the value of using fresh, local, high quality ingredients as much as possible.

She is a Master Gardener, has gardened in Colorado for almost 35 years, and is also a graduate of the Rocky Mountain Center for Botanical Studies with a broad background in both the culinary and medicinal use of herbs.

In April of 2002, Linda won 2nd place in the Sweet Taste of Fort Collins. She is dedicated to teaching home cooks the quick, delicious, healthy way to week-day meal preparation.
