About the seller:

Hedgerow Harvest offer a growing range of foraging and wild food courses in Wiltshire and Dorset. These relaxed, educational and fun courses aim to introduce people to the wealth of nature’s larder.

Our knowledgeable and experienced instructor is passionate about wild food, conservation and natural history. He has been running these courses for a number of years, but has had this interest since childhood when his parents bought Richard Mabey’s Food for Free and he was taken to catch crabs and lobsters on the Gower coast. Since this time, he has undertaken botanical surveys for a number of Wildlife Trusts. In addition to running foraging courses our instructor routinely gathers a wide range of wild foods for his own use – leaves, herbs, berries, fruit, nuts, fungi and wild meat. A move to Dorset has given the opportunity to broaden out into seaweed, shellfish and fish. A growing interest is truffle hunting with dogs.

Detailed description:

Spring is the time of new growth and the countryside offers a wealth of delicious free greens – be they salad leaves, wild vegetables or herbs. There are also some edible flowers, roots and a few fungi to be found. With a little know-how these can all be gathered to give salads, soups, sauces, desserts and many other dishes. They can also be ingredients in teas, beer and other alcoholic drinks.

Our full day introductory courses combine:

  • An introduction including safety and legal aspects
  • A foraging walk locating and collecting a range of seasonal wild foods. This includes discussion of their identification and uses
  • An indoor session preparing, cooking and eating a three-course lunch based on our finds
  • An illustrated talk on wild foods

  • Most attendees have done a small amount of foraging, typically picking blackberries or making Sloe Gin. All are keen to learn more and gain confidence so they can go on to forage on their own. Participants will receive extensive handouts and get access to on-line materials.
