Wild Meat in a Day – prepare, cook, and eat!

Whether you are a novice or a more experienced cook, nervous of feathers or keen to get plucking, Wild Meat in a Day promises to be a fun and hands-on day of, preparing, cooking and eating a variety of feathered and furred game. Robert Gooch and Ray Kent of The Wild Meat Company, one of Rick Stein’s Food Heroes, will give participants the confidence to prepare game at home as well as sharing a wealth of experience about local game. You’ll be given a step-by-step guide to preparing fresh locally-shot game that will include rabbit, venison and other game birds. There’ll be the chance to skin your own rabbit, pluck a bird and learn some butchery techniques.

Hosts for the day are Mark and Sophie Dorber of The Anchor in Walberswick, near Southwold, Suffolk. Well known for selecting the very best seasonal, local ingredients. The Anchor’s Head Chef, Mike, will give us a cookery demonstration of exquisite, mouth watering game dishes as well as passing on tips, ideas and advice for cooking game at home.

Over a relaxing lunch in The Anchor’s dining room you will be treated to an inspiring tasting menu of game dishes including some of those demonstrated earlier in the day. We’ll also aim to inspire you to sample a hand-picked selection of wine and beer that will complement the food served.

Food Safari’s founders are Polly and Tim Robinson, who share a passion for sourcing, cooking and eating food made from fresh local produce. We have put down roots in the Suffolk countryside after many years in London.

Like many people, we were shopping more and more at farmers' markets to get our hands on fresh, local food and we really enjoyed meeting the producers who are so full of infectious enthusiasm for their produce.

Part of Polly’s family have been farming organically in North Wales since the 1970s, so we both knew there was incredible hard work and dedication behind the finished product. We wanted to find a way to get to meet these food heroes, to hear the unique stories, fascinating insights, and to experience the beautiful landscapes of the Suffolk countryside.

Suffolk is firmly on the food map and its outstanding natural countryside and coastal beauty combined with an abundance of local producers, restaurants, specialist food shops and the acclaimed annual Aldeburgh Food and Drink Festival make it a perfect destination for foodie holidays. We hope Food Safari will become a new way to explore Suffolk and get to know the people and landscapes that make it special.
