Artisan Bread School was established by Carl Shavitz to promote the revival of artisan bread-making. The 5-day courses are given at Fattoria degli Usignoli in Italy just 30 minutes from Florence. Carl provides a unique learning experience for everyone who wants to discover the art. Class sizes are limited to 6 participants so that you receive personal attention. The hands-on courses specialize in European breads - sourdoughs, as well as a wide-range of Italian specialties like focaccia, ciabatta, and grissini. You will leave Artisan Bread School courses with the skills to bake delicious, nutritious and healthy artisan breads in your own kitchens. The fee includes 5 nights accommodation, breakfast and evening meal with wine, tuition, ingredients, an embroidered Artisan Bread School apron and extensive course recipes and notes.
Qualifications
Carl Shavitz is the Founder/Director of Artisan Bread School. An artisan baker, he supplies breads to restaurants and specialty shops in the Cambridge area and London. Carl started Artisan Bread School in 2005 and devotes May each year to teaching at its School in Italy. He has given numerous courses in the United Kingdom and The United States. Carl trained at The Village Bakery in Melmerby, Cumbria and Ballymaloe Cookery School in Cork, Ireland. He worked at The Village Bakery and The Three Crowns Inn in Herefordshire before becoming an independent artisan baker.
